MOOSE RIBS

I will always remember the day I tasted moose ribs for the first time!
They’re not easy to find, but if you go hunting and bring back a nice catch, or if you’re lucky enough to get your hands on this tasty game meat, I highly recommend trying my recipe for moose ribs on the grill. They’re even better on the charcoal grill, perfectly smoky, but you can make this recipe on any grill. You can also make the recipe with beef ribs, the household meat with the closest flavor profile and texture to moose.

PREP TIME : 20 minutes
COOKING TIME : 100 minutes
INGREDIENTS
- One large sweet onion, sliced
- 100 ml olive oil
- 10 ml House of BBQ Experts X Monette Outdoor’s Appalachian Spice Mix and Rub
For the sauce
- 150g brown sugar
- 5ml Dijon mustard
- 30ml Worcestershire sauce
- 60ml House of BBQ Experts Funky Chili Sauce
- 60ml House of BBQ Experts Sweet Lemon Sauce
- 30ml soy sauce
- 15ml concentrated beef broth
- 150ml water
- 1 rack moose ribs (or beef ribs if you can’t get your hands on this absolutely delicious game meat)
DIRECTIONS
- Brown the onions in olive oil
- Mix all the sauce ingredients in a cast iron BBQ-safe skillet
- Coat the ribs with the Appalachian spice mix
- Add the ribs to the skillet
- Cook in the sauce for an hour and a half in indirect heat
- Take the ribs out of the sauce
- Grill the ribs over charcoal for 5 minutes in direct heat and baste with the sauce as they cook
- Serve and enjoy!
