Moose ribs

I will always remember the day I tasted moose ribs for the first time! 

They’re not easy to find, but if you go hunting and bring back a nice catch, or if you’re lucky enough to get your hands on this tasty game meat, I highly recommend trying my recipe for moose ribs on the grill. They’re even better on the charcoal grill, perfectly smoky, but you can make this recipe on any grill.  You can also make the recipe with beef ribs, the household meat with the closest flavor profile and texture to moose.


PREP TIME : 20 minutes

COOKING TIME : 100 minutes



For the sauce


  1. Brown the onions in olive oil
  2. Mix all the sauce ingredients in a cast iron BBQ-safe skillet
  3. Coat the ribs with the Appalachian spice mix
  4. Add the ribs to the skillet
  5. Cook in the sauce for an hour and a half in indirect heat
  6. Take the ribs out of the sauce
  7. Grill the ribs over charcoal for 5 minutes in direct heat and baste with the sauce as they cook
  8. Serve and enjoy!
