MEATBALLS WITH HIDDEN VEGETABLES
For the meatballs:
1lb ground beef
1 small yellow onion
1 green bell pepper
2 large carrots
1 handful baby spinach
1 clove of garlic
For the sauce:
1/2 bottle of House of BBQ Experts Ketchot Sauce
1/4 cup brown sugar
1/4 cup balsamic vinegar
Preheat the grill to 350°F creating an indirect cooking zone.
In a food processor, combine the onion, bell pepper, carrots, garlic and spinach. Process until the vegetables are finely chopped.
In a bowl, combine the ground beef, egg and vegetable mixture. Season with spices to taste.
Shape the mixture into meatballs and place them in a baking dish (I use a Pyrex dish).
In another container, mix all the sauce ingredients and pour it over the meatballs.
Cook the the dish in the indirect cooking zone until the meatballs reach an internal temperature of 160°F.
