Apple, Ham and Cheese Crepes

When time permits, on a Sunday morning for example, it’s always fun to go outside and cook a nice BBQ breakfast for the whole family. You just pour yourself a nice cup of coffee and then slowly get to work.
This crepe recipe is simple and delicious, and I guarantee it will start your week off right.
By the way, I always try to make recipes that appeal to as many people as possible, so I’m very pleased to say that these crepes are also gluten-free and low-carb. (That said, if you prefer traditional crepes, you can just as easily make this recipe using your favorite crepe recipe as your base š).
Here’s how to make this excellent meal:
Required tools:
- Cast iron griddle (or skillet)
Ingredients (for 4 crepes):
- 1 green apple, julienned
- 1 cup grated cheeseĀ
- 4 slices of ham
- 1 cup almond flour
- ¼ cup coconut flour
- 1 tsp. baking soda
- 1 tsp. xanthan gumĀ
- ¼ cup milk
- ¼ cup 35% cooking cream
- 1 pinch of salt
- 3 eggs
- Softened butter, for cooking
- Maple syrup, to tasteĀ
Directions:
- Set the cast iron griddle (or skillet) on the grill and preheat it to no more than 350°F (any higher the butter and pancakes may burn).
- In a bowl, combine the almond flour, coconut flour, baking soda, xanthan gum and salt.
- In another bowl, beat the milk, cream and eggs until well combined.
- Transfer the liquid ingredients to the bowl of dry ingredients and mix together until the mixture is soft and uniform.
- Brush the griddle (or skillet) with butter.
- Pour the batter onto the griddle (or into the skillet) in 4 portions and use a spatula to flatten each portion into a crepe.
- Flip the crepes after about 2 or 3 minutes of cooking to brown the other side. Keep the crepes warm once they’re done cooking (you can wrap them in aluminum foil, for example, to keep them warm).
- Brush the griddle (or skillet) with butter once again.
- Place the ham slices and julienned apples on the griddle (or in the skillet) and cook to roast them lightly. Keep warm.
- Transfer the crepes back to the cooking surface and add, in the following order, a slice of ham, then julienned apples to each one. Then top each crepe with grated cheese and maple syrup or Raspberry Chipotle sauce.
- Cover the BBQ and let it cook for 2 to 3 minutes, until the cheese melts and the syrup caramelizes.
- Serve and enjoy!
