Did you know that a perfect cold smoke can be attained with a Kamado-style grill? If you’re into cold smoking things like salmon, seafoods, cheeses, this article is for you.

Kamados are charcoal BBQs made of Japanese ceramic. This style of grill has very deep roots in the Japanese culture, going back more than 3000 years in the past. Kamado actually means “cooker” or “oven” in Japanese. Many people in the BBQ world associate the egg-shape grill style with the world “kamado”.

Right now, it’s one of the best grills available on the market. Thanks to it’s air-tight make, you can perfectly control the air inlets and smoke your food for several hours, all without adding coal.

Some models can keep their heat for up to 36 hours thanks to the thick ceramic bowl. That ceramic bowl holds and spreads heat for a long time.

Cold smoking


This little beast does not only do hot smoking, it can also do cold smoking. But what is cold smoking?

First of all, “smoking” is the process of flavouring, browning, cooking, or preserving food by exposing it to smoke. We can do this by burning or smoldering material, most often wood. By contrast, “cold smoking” differs from hot smoking in that the food remains raw throughout the smoking process, rather than cooked. Smokehouse temperatures for cold smoking are typically done between 20 to 30 °C (68 to 86 °F). In this temperature range, foods take on a smoked flavour, but remain relatively moist.

Cold smoking can allow you to get awesome smoke flavours in your cheese, fishes, spices, homemade bacon and even your nuts!


What if I’m an original grill and steak guy


If you’re a grill and steak guy, the Kamado will also answer your needs. One of the advantages of coal is that it gains more heat as you put in more coal. It’s as simple as that. So if you want to grill your meat or  vegetables, just add charcoal and make the oxygen intake bigger to get up to 2000 degrees heat in no time!
